
Growing up I was the oddball kid who never liked my peanut butter and jelly to touch. I loved either a plain peanut butter sandwich, or it all dressed up with bananas and honey, or a good old fluffernutter sandwich (peanut butter and fluff). I loved my jelly plain on toast..
However, now I’ve found a healthy and creative way to make “PB & J” my morning jam!
Peanut Butter & Jelly Muffin Mix
1c Oat Flour (I used organic old fashion oats and ground them into a flour)
1/2 cup all-purpose flour ( I used a mix of buckwheat and chickpea flour)
1/4 cup peanut (or almond) flour (powdered peanut butter would also work)
2 small-medium ripe bananas
1/4 c brown coconut sugar (sweetener of choice)
2 flaxseed eggs ( 2tbsp milled flaxseed + 6 tbsp water)
2 tsp double acting baking powder
3/4 tsp vanilla extract
1/2 tsp salt
1/2 cup natural unsalted nut/seed butter
1 c milk of choice
Jelly Swirl
1 cup strawberries pureed
1 tbsp agave nectar (honey or maple syrup would work well too)
2 tbsp brown coconut sugar
Preheat the oven to 350 degrees
Mix all your dry ingredients
if using 2 flaxseed eggs instead of real 2 eggs like I did, then mix your flaxseed and water and let sit 1-2 minutes
Mix all other wet ingredients add the flaxseed mixture to the wet ingredients
Add wet ingredients to the dry ingredients and mix thoroughly
Butter/oil your muffin pans (or use liners)
Add muffin mix to your muffin pan (mine made six muffins)
Puree your strawberries in blender or food processor mix with agave (or another liquid sweetener of choice) and brown coconut sugar (or other sugar).
Swirl about a tbsp of strawberry mixture in each muffin
I made six full-size muffins and would have enough of the strawberry mixture for each one. However, my husband doesn’t like strawberries in his muffins and so I made blueberry muffins for him using the same muffin mixture (which I tried and didn’t love, even though he seemed to enjoy them). I found the PB&J muffins quite delicious and will have to make myself some more again soon!

I’m always modifying recipes to my tastes too so I understand π…though I’ve found when using chickpea and buckwheat flour, I need a little extra sweet to balance out the bitter earthy taste. π€¨π
have you tried soy powder? it balances out the earthiness
